Hazelnut crunch, also called bresilienne, croquant or even praligrains in France, is made of granulated sugar and roasted chopped hazelnuts.
The simultaneous cooking of these two ingredients allows, on the one hand, the coating of the hazelnut grains by the sugar crystals and, on the other hand, to give to the finished product a beautiful gilded color.
Hazelnut crunch can be used as decoration for pastry makings (bresilienne tart) and for ice creams (cones or hazelnut/bresilienne ice creams) or as filling or decoration of pralines for chocolate makers.
Various calibers of grains are available, going from 1-2 mm for fine hazelnut crunch up to 2,5-4 mm for gross hazelnut crunch.
In the same way, according to the application or the need, the percentage of hazelnuts in the product can vary from 20% to 70%.

– Plastic bags of 20 kg or 25 kg
